*This pandemic has forced us to stay at home. Fortunately, many of us has turned this into a wonderful opportunity to experiment and explore dishes we have not tried. This recipe was sent by a physician who was raised in Manila but now working in the province. As of this writing she stays in a barrio, somewhere in the north and has never gone back to the big city, due to our current health crisis. She loves to travel and cook in her free time.
Cheeseburger Baked Potatoes
4 medium sized potatoes
Virgin Coconut oil
1/4 cup milk
2 tbsp butter
2 pcs CDO ulam burger patty, fried and minced well
1/2 cup bacon, fried and minced
1/2 cup green onions, chopped
1/2 cup grated cheese
Salt and Pepper
Preheat oven at 200°C.Wash potatoes well, then towel dry. Poke potato skins with fork. Rub oil all over the potatoes and bake at oven for 50 mins, turning to other side after 25 mins to evenly distribute the heat.
Cut potatoes lengthwise. Scoop out flesh, then set aside the skin. Mash potatoes while hot and mix with butter, milk. Season with salt and pepper according to taste. Return mashed potatoes in skin. Top with minced burger patty and bacon, green onions, and grated cheese. Bake until cheese melts/turns light brown. Serve hot.
