Filipinos are familiar with avocado as a main ingredient for desserts. But traveling solo, made me discover that avocados can be very versatile as a main ingredient to other dishes.
Take for example this easy and no cook salad. The creaminess of the avocado blends well with the tuna and the other ingredients. Most of all, it is super healthy!
15 oz tuna in oil, drained
1 cucumber sliced
1 large avocado peeled & sliced
1 small red onion thinly sliced
1/4 cup cilantro sliced
1/4 cup parsley sliced
2 Tbsp freshly squeezed lemon juice
2 Tbsp olive oil
1 tsp salt to taste
1/8 tsp black pepper
Flaxseeds and chia seeds (optional)
In a large salad bowl, combine: sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna, cilantro and parsley.
Drizzle salad ingredients with 2 Tbsp lemon juice, 2 tbsp olive oil, 1 tbsp salt and 1/8 tsp black pepper. Toss to combine and serve.
